Chocolate mayo cake (no eggs) with ganache topping

2 cups flour

1/2 cup cocoa

1-1/2 teaspoons baking soda

1/4 teaspoon salt

1 cup sugar

3/4 cup Hellman's mayonnaise

1 cup water

1 teaspoon vanilla



1. Sift the flour, cocoa, soda and salt together. 2. Cream the sugar, mayonnaise, water and vanilla together. 3. Add dry ingredients to the creamed mixture and stir. 4. Pour batter into greased and floured 9 x 13 inch pan. 5. Bake at 350 for about 25-30 minutes.


Ganache

  • 8 oz 1 cup of good quality dark chocolate

  • 1 cup (8 ounces; 240ml) heavy creamor heavy whipping cream

  • teaspoon of espresso powder
