Note: If searing the chicken in a skillet, season with s olive oil.
1 tablespoon butter
1/4 4 cup chopped white onion
1 tablespoon finely chopped garlic
1/2 ½ cup white wine
1/4 cup fresh lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon white pepper
½ cup (1 stick) cold butter, cut into chunks 1/2
3 cup sun-dried tomatoes, packed in oil, drained, 1/3 cut lengthwise into 4-inch wide strips
2 large basil leaves, cut lengthwise into 1/4-inch wide str 4 goat cheese medallions (1 ounce each)
In a large skillet, heat 1 tablespoon of butter and add the garlic about 1 minute, until the onions begin to soften. Add white wine and lemon juice reduce then add butter tablespoon at a time to make thick sauce season with pepper and salt serve - warm sun dried tomatoes and garnish grilled chicken with basil and goat cheese - drizzle sauce over and serve.
